Lemon Chilli Chicken - Slow Cooker Method (Syn Free)


Lemon chilli chicken cooked in slow cooker, syn free

Ingredients:


  • 4 Chicken breasts
  • 220ml Chicken stock
  • 2 onions chopped
  • 1 red pepper sliced
  • 1 red chilli sliced (leave seeds in for extra kick)
  • 1 tsp ginger
  • 3 garlic cloves crushed
  • 1 tsp coriander
  • 1 tsp cumin
  • 1 tsp tumeric
  • 2 tsp white wine vinegar
  • 4 tbsp lemon juice
  • salt and pepper
  • 1 cup frozen peas (added during last hour)


Directions:


  • Add all the ingredients to the slow cooker
  • Cook on low for around 5 hours
  • For final hour, add cup of frozen peas.
  • If the mix is runny, leave lid off and turn up to medium to help thicken
  • Serve with rice, and additional stir fried vegetables if you wish
