Chicken Chipotle & Chorizo Stew (Slow Cooker)

Ingredients:


  • 1 onion, chopped
  • 1 carrot, diced
  • 700g chicken breast, skinned
  • 200g chorizo chopped
  • 1 tin of tomatoes
  • 6 cloves garlic, chopped
  • 1 whole dried chipotle chilli
  • 1.5 tblsp paprika
  • 1 tblsp smoked paprika
  • Tin of chickpeas including juice
  • 1 chicken stock pot
  • Seasoning
  • 50ml water
  • 3 tblsp tomato puree
  • 2 tsp cumin powder

Directions:


  • Shove it in the slow cooker for 8 hours on low
  • Discard the whole chilli.
  • OR, if you like your food hot and spicy, remove chilli, chop up and mix back into stew.
  • 10 1/2 syns for the lot and serves at least 5. So 2 syns approx per serving.
