Slimming World Campfire Stew - Syn Free

 Campfire Stew

Ingredients:

1 small Pork Or Gammon Joint (all visible fat removed)
1 Chopped onion
2 Chopped Peppers (any colour you like)
3 Crushed garlic cloves
1 tbsp Smoked paprika (sweet or spicy)
2 tins of baked beans
1 tin chopped tomatoes
I chopped red chilli or 1 tsp chilli powder (optional)

Directions:


  • If using Gammon, soak over night in cold water. Change water before going to bed
  • Add all the ingredients to the slow cooker and switch on.
  • Set slow cooker to low setting and cook for at least 6 hours on low, or until you get home if working a longer shift!
  • Check consistency of sauce and tenderness of meat when you get in. Meat should be starting to fall apart and sauce thickening.
  • If need be, cook for 1 hour on high with lid off to finish the meat and thicken the sauce
  • Simply shred the meat in the slow cooker with two forks and mix well before serving!
  • Serve with rice or boiled potatoes, or simply on its own

Useful Tip 1! You can leave out the chilli at the cooking stage and add in some chilli flakes when you serve.

Useful Tip 2! Freeze any leftovers and take them to work as a packed lunch!
