Sausage Casserole - Slow Cooker Recipe

Sausage Casserole Slow Cooker Method

Ingredients:

1 pack Linda McCartney Caramelized onion and rosemary sausages
6-8 rashers of bacon with fat cut off
2 onions
1 leek
Tin chopped tomatoes
3 tbsp tomato puree
300 ml chicken stock
1-2 tsp paprika
1-2 tsp garlic powder
1 tsp mixed herbs
splash of worchester sauce
Sweet Potato (optional)
Carrots (optional)

Directions:


  • Cook sausages and bacon ( can just be browned) before adding to the slow cooker (can be cooked mine the night before ready to pop in the slow cooker the next day).
  • Cut the sausages into bit size pieces once cooked/browned.
  • Chop onion, leek (also sweet potato and carrots if adding) and add to bottom of slow cooker
  • Add bacon and sausages
  • Mix tin tomatoes with stock, puree, paprika, garlic and mixed herbs and add to slow cooker
  • Cook on low for 9 hours.
  • Approximately 2-3 syns per serving,
  • TIP: For a vegetarian option, omit the bacon.
