Caribbean Pepperpot Stew


 Caribbean Pepperpot Stew

 Ingredients:

400g stewing beef, all visible fat removed, cut into bite size pieces
2 red peppers, de-seeded and cut into bite size pieces
1 small sweet potato, peeled and cut into bite size pieces
200g green beans, trimmed and halved
2 garlic cloves,
Finely chopped1 to 2 tbsp jerk seasoning
1 tbsp red wine vinegar
1/4 tsp sweetener
200g passata with onion and garlic
200ml beef stock
1 to 2 tbsp Worcestershire sauce
Salt and pepper
Small handful of fresh flat leaf parsley, chopped, to garnish

200g long grain rice

Method:

Brown the meat and put all the ingredients for the stew in to the slow cooker and cook on high for 4-6 hours until meat is tender. Garnish with chopped parsley and serve with boiled rice.

Serves 2 and is FREE on Extra Easy
