Syn Free Vegetable Chow Mein - Slow Cooker Method

Ingredients:

You can use almost any vegetable you like...here is a suggested list!
  • Mushrooms, quartered
  • Peppers (all colours), thick sliced
  • Onions quartered
  • Courgettes chopped in chunks
  • Mange tout left whole
  • Spring onions finely chopped
  • Bean sprouts (used bagged)
  • Baby corn, halved
  • Garlic, crushed and chopped
  • Green Beans, chopped
  • Frozen Sweetcorn
  • Frozen peas
  • Spinach
  • Tin water chestnuts
  • Tin bamboo shoots
  • Quorn chicken pieces (optional for additional texture)
  • Noodles* (dried)

Adjust the amount of vegetables used according to the size of your slow cooker!

For the sauce:

1 teaspoon of Chinese 5 spice (optional)
1 teaspoon of ground ginger
2 cloves of crushed garlic
2 tablespoons of tomato puree
4 tablespoons of dark soy sauce
2 tablespoons light soy sauce

Directions:


  • Prepare the vegetables.
  • Add all the vegetable and sauce ingredients to the slow cooker and mix to combine
  • Switch the slow cooker to high for 3 hours, or on low for 5 hours.
  • Check seasoning and add additional light soy if required
  • For the noodles, if using dried, cover with boiling water for a few minutes to soften and then add these to the slow cooker for the final 10 to 20 minutes or so.
  • *If you wish, you can use 'straight to wok' noodles, add these about 30 minutes before the end and syn them accordingly!
Serving suggestion: To make this even more filling, serve with additional boiled rice to help soak up the wonderful sauce flavour!
