Syn Free Vegetable Chow Mein - Slow Cooker Method

Ingredients:
You can use almost any vegetable you like...here is a suggested list!
- Mushrooms, quartered
- Peppers (all colours), thick sliced
- Onions quartered
- Courgettes chopped in chunks
- Mange tout left whole
- Spring onions finely chopped
- Bean sprouts (used bagged)
- Baby corn, halved
- Garlic, crushed and chopped
- Green Beans, chopped
- Frozen Sweetcorn
- Frozen peas
- Spinach
- Tin water chestnuts
- Tin bamboo shoots
- Quorn chicken pieces (optional for additional texture)
- Noodles* (dried)
Adjust the amount of vegetables used according to the size of your slow cooker!
For the sauce:
1 teaspoon of Chinese 5 spice (optional)
1 teaspoon of ground ginger
2 cloves of crushed garlic
2 tablespoons of tomato puree
4 tablespoons of dark soy sauce
1 teaspoon of ground ginger

4 tablespoons of dark soy sauce
2 tablespoons light soy sauce
Directions:
- Prepare the vegetables.
- Add all the vegetable and sauce ingredients to the slow cooker and mix to combine
- Switch the slow cooker to high for 3 hours, or on low for 5 hours.
- Check seasoning and add additional light soy if required
- For the noodles, if using dried, cover with boiling water for a few minutes to soften and then add these to the slow cooker for the final 10 to 20 minutes or so.
- *If you wish, you can use 'straight to wok' noodles, add these about 30 minutes before the end and syn them accordingly!
Serving suggestion: To make this even more filling, serve with additional boiled rice to help soak up the wonderful sauce flavour!
